Term 

What are we learning 

1 

Nutrition and Health  

Students will be introduced to healthy eating and nutritional principles. They will learn about the 3 macronutrients and 2 micronutrients. They will look at the importance of healthy eating and how this can affect a persons health. Students will look at the various age ranges and groups and how food needs to be adapted to meet their needs.  

2 

Food Science  

Students will build on nutrition and look at how cooking affects the various nutrients. Students will carry out various experimental and practical work alongside this and finding out what to a happens to a variety of ingredients and why. 

3 

Food Safety  

Food safety in the food room is of the utmost importance in food, students will spend this term looking at food hygiene and safety principles and the outcomes that can happen if the correct rules and procedures are not followed.  

4 

Food Choice 

Students will be looking this term at why certain food choices are made and what influences these. Students will spend time research and cooking meals from Britain and international cuisines. Students will carry out sensory evaluations and taste test a number of different products throughout the term.  

5 

Food Provenance  

During this term students will be looking into where ingredients come from and the environmental causes that can impact how sustainable food is. Students will complete investigation work into how food is processed and how this can affect its sensory properties.  

6 

NEA practice  

In preparation for next year students will spend this term practising some coursework techniques. This will include exploring how to complete a nutritional analysis on the computers, creating meal recipes and using evaluation techniques.
